Using Alexandra's Tajine Spice
450g fresh stone fruit, peeled and pitted
1/4 cup sliced dried apricots
1/4 cup chopped fresh or dried dates
1/4 cup pomegranate molasses or brown rice syrup
1 tsp grated fresh ginger
1 tsp Alexandra’s Tajine Spice
2 Tbsp lemon juice
Cut larger fruit into quarters and smaller fruit into halves. In a flameproof tajine or a heavy bottomed pan, combine fresh fruit, apricots, dates, molasses, ginger and Alexandra’s Tajine Spice. Cover and cook over medium-low heat for 10 minutes or until juices release and fruit is slightly tender. Stir in lemon juice and cook, stirring constantly for 2 minutes or until fruit is soft.
Serve warm or chilled with yoghurt or rice (the mixture will thicken when cooled).
